Jackalberry Bar has partnered with Suntory® ROKU Gin to create a Japanese oasis, blooming in Cherry Blossoms, with four exclusive Japanese Gin cocktails and an Izakaya food menu, all in the heart of Sydney at the Hyatt Regency at 161 Sussex Street, Sydney.

Taking inspiration from Hanami, the Japanese custom of enjoying the transient beauty of flowers, for five weeks, guests will be transported to springtime in Japan with the installation of a pink and white cherry blossom canopy and flourishing trees.

Underneath faux Sakura blossoms, guests can sip on four exclusive Jackalberry x ROKU Gin cocktails, all created with unique Japanese flavours and the crisp and floral taste of Suntory® ROKU Gin.

Crafted by Jackalberry’s mixologists, each cocktail accentuates the complex, multi-layered, yet harmonious flavour of the Japanese craft gin, while injecting the otherworldly flavours Jackalberry Bar is renowned for.

Masterfully created with traditional Tataki technique and served in traditional Japanese meal boxes, an Izakaya menu featuring iconic Japanese flavours – think Teriyaki, Togarashi (seven spices) and wasabi, has been created, perfectly paired to the complex flavours of ROKU Gin.

Beyond the pale pink and white blossoms, the Japanese theme extends to the quaint seating with rattan and white accents. Above the bar, the cascading cherry blossom canopy sets the scene for sensuous sipping and wander lusting.

A hidden oasis in Sydney’s urban jungle for inspired globetrotters, the Jackalberry x ROKU Gin collaboration will bloom for five weeks, before calling end of season on 8 May 2022.
